Rubber Trees, Thai Temple and Coconut Pudding!

Further explorations on the eastern shore of Koh Chang island found us scootering through several groves of rubber trees on route to the Thai Buddhist temple of Salaphet. Very different in design from the temples we visited in Nepal, this one is surrounded by a guardian dragon and is quite ornate. The grounds include many statues and shines, and the inside contains a bright golden Buddha and a brilliant mural surrounding the upper interior walls.










Across the street from the temple a young woman with a scooter sidecar food stall is cooking Coconut Pudding. These treats are crisp on the outside, with sweet creamy pudding on the inside. Made simply with coconut milk and a sugar syrup with cut bits of spring onion, the result is incredible. I love Coconut Pudding.
