In the heart of northwestern Wales lies Snowdonia National Park, an 823 square mile area of pristine mountains and lakes, and the jewel in the parks’ crown is Mount Snowdon. At 1085 meters (3560 ft) it is the highest peak in Wales, and while there are many trails which lead to the summit, there is also a railway which offers stunning views with far less effort. The Snowdon Mountain Railway, which has been in continuous operation since 1896, is a narrow gauge rack and pinion (Cog Railway) line, and makes the ascent in approximately one hour. With tickets in hand, we boarded our train car named the ‘Dame Shirley Bassey’, and began our climb. Upon reaching the summit, like all intrepid mountaineers, we posed for photos.

Regarding all things Snowdonia, we discovered a locally produced cheddar cheese, which I am willing to declare is the absolute best cheddar I have ever tasted. The Snowdonia Cheese Company's signature black bomber extra mature cheddar is soft and smooth with a dash of crystals and a subtle tang. Were I a poet, I would be inspired to write an ode to black bomber Cheddar.
